GRANDMAS APRICOT NOODLE PUDDING
COOK TIME - 45 -60 Minutes

1 Package ( 8 z) medium egg noodles
1/2 lb Cottage Cheese
8 oz sour cream
2 eggs
1/4 cup butter or oleo
1/2 cup raisins
1/2 cup sugar or splendor
1 Jar apricot Jam

Cook noodles, drain. Place in 2 quart greased pyrex dish. Mix all ingredients

Bake at 350F 45 -60 minutes until done

Apple Pecan dressing
Cook this apple pecan dressing in a baking dish or in the bird.
Ingredients:

* 1 cup chicken broth
* 1/2 cup chopped celery
* 1/3 cup chopped onion
* 4 tablespoons butter
* 1/2 teaspoon salt
* 4 cups dry wheat bread cubes, about 8 slices
* 2 medium apples, peeled, cored, and finely chopped
* 1/2 cup chopped pecans
* 1 teaspoon ground sage
* 1/4 teaspoon ground cinnamon
* 1/8 teaspoon pepper

Stuffed articokes recipe.
6 artichokes
2c dry bread crumbs
4 T grated parm cheese   
1 glove garlic minced 
1T minced parsley
1/3 c olive oil
mix together
boil artichokes upside down 15 min
stuff with mixture
bake uncovered with salt water about an inch deep
baked at 425 1/2 hr

Joan's Eggplant recipe.
Eggplant cut into 1/2 inch round pieces, skin and all
3-4 eggs scrambled
4 C's seasoned breadcrumb
Extra virgin Olive oil
dip eggplant into eggs than into crumbs, put in already heated oil, Joan says not to hot, I have electric so I cooked mine on 4-5, than after 3 mintues,

I poked them several time with the fork, per Joan to let out steam out, turn when brown and let cook until brown on other side. Joan says no paper towels because it's olive oil and believe it or not, it's not greasy. I did not add any salt or pepper since breadcrumbs are already seasoned.

You can cook the fried green tomatoes the same put don't poke them.

Vegetable Beef Barley
This recipe is very close to the vegetable beef barley soup they serve a Denny's.

1/2 lb ground beef
1/2 bag frozen mixed vegetables (you know the kind with the carrot cubes,
and green beans, and lima beans, etc.) 1/4 cup barley (approximately) 1
(32 ounces) can beef broth 1 (14 ounces) can diced tomatoes

4-6 servings / 40 minutes 10 min prep

1. Brown ground beef, add vegetables, tomatoes, barley and broth.

2. Salt and pepper to taste.

3. Let it simmer for a least 30 minutes.

4.This is great for a crock pot, as the longer it cooks, the better it
is.

Homemade Alfredo Sauce
1 block cream cheese (any brand)
3/4 cup Parmesan Cheese
1/2 cup butter or margarine
1/2 cup milk (2% or whole works best)

Combine all ingrediants together in medium sauce pan. Blend well with an electric hand mixer. Warm on medium heat, stirring continuously (else it'll burn).

Serve over pasta!

Cyneca Grilled Peppers
Ingredients:

4 doz fresh jalapeno peppers
1 pkg cream cheese
fresh chives, finely chopped
1 1/2 cups cheddar and Monterey jack cheese finely grated
5 or 6 of the pepper tops
garlic powder (to taste)
Cavenders Greek Seasoning (to taste)
Bacon
Toothpicks
exam or rubber gloves
pepper grill tray


Mix cream cheese with garlic powder, chives, greek seasoning and cheddar cheese mixture. Set aside. PUT ON GLOVES!! Top peppers, slit pepper body down one side and clean out all seeds. Finely chop 5 or 6 of the pepper tops (minus the stems) and mix with cream cheese mixture. Cut bacon slices into pieces about 1 1/2 to 2 inches long. Stuff pepper
bodies with cream cheese mixture. Place bacon piece over the top and secure with toothpick. Place in grill tray (purchased at HEB) or somehow set upright on grill. Grill until peppers are darker green and slightly soft, and cheese has melted. Serve hot.

Veggie Dip
2/3 cup sour cream
2/3 cup mayonnaise
1 tbsp. minced or fresh parsley

Green Bean Casserole
1 large can french cut green beans
1 large onion sliced thin
1 can baby peas optional
1 small jar sliced mushrooms
grated cheddar cheese - amount depends on how much you like cheddar cheese
1 can cream of mushroom soup & 1/2 soupcan milk mixed
2 cups Ritz crackers crushed

Grease casserole. Add layers of ingredients as listed - DO NOT MIX. Bake at 300 for 30 minutes.

Corn Pudding
4 1/2 cups drained corn from cans
1/4 cup sugar
1/4 cup all-purpose flour
1 tsp. salt
1/4 tsp. pepper
2 beaten eggs
2 tbsp. melted butter
1 1/2 cups milk

Add sugar, flour, salt, & pepper to corn. Add eggs & butter. Add milk. Mix well. Pour into well-greased (use butter) dish. Bake at 400 for about 1 hour or until top is light brown.

Chess Cake Pie
1 package Duncan Hines Yellow Cake Mix
1 stick melted butter or margarine
1 well beaten egg
Press above ingredients into lightly greased 9x13 glass pan.

8 oz. Cream Cheese
3 well beaten eggs
2 1/2 cups (1/2 lb.) confectioners sugar
1 or 2 tsp. vanilla
Mix together and pour onto the crust (other ingredients already in pan) and smooth over to edges around pan.

Bake at 350 for 35-45 minutes (takes the longer time in an electric oven). Let cool for several hours and then cut into squares.

Sweet Potato Casserole
Mix together & put in casserole dish:
1 large can (40 oz.) sweet potatoes - drain & mashed
1 cup white sugar
1/2 cup melted butter
2 eggs - beaten
1 tsp. vanilla
1 tsp. cinnamon

Top with these ingredients mixed together:
1 cup brown sugar
1/3 cup flour
1/3 cup melted butter
optional - 1 cup chopped nuts

Bake at 350 for 25-30 minutes. Serves 6

  7 Layer Dip
1st layer: mix 1 cream cheese bar with 1 cup of mayonaise, spread on pie plate (I use glass ones)

2nd Layer spread over salsa as thick as you like.

3rd Layer mix green pepper, red pepper, green onions, 2-3 jalapenos, and tomatoes, spread over 2nd layer.

4th layer grate cheddar and spread over top of 3rd layer.

This is best if chilled for an hour.

Eat with Taco chips.

Hamburger Cupcakes
1 lb of hamburger
1/2 cup of chopped onion
1 tin of mushroom soup
salt, pepper & garlic to taste
12 slices of bread
1/2 cup of cheddar cheese

Preheat oven to 350. Bake for about 35 to 40 minutes.

Cut of the outer crusts from the slices of bread so that you only have a small square of bread and cut the crusts up to add to the hamburger mixture.

Mix hamburger, onion, mushroom soup, spices adn crusts all together. Add 1/2 cup of cheddar cheese and mix.

Butter bread slices and place buttered side down in cupcake tins. Fill slices with mixture, top with more cheese.

Bake in oven. These are good hot or cold snacks. Mmmmmm!

French Canadian Tourtiere


1 pound lean ground pork
1/2 pound lean ground beef
1 onion, diced
1 clove garlic, minced
1/2 cup water
1 1/2 teaspoons salt
1/2 teaspoon dried thyme, crushed
1/4 teaspoon ground sage
1/4 teaspoon ground black pepper
1/8 teaspoon ground cloves
1 recipe pastry for a 9 inch double crust pie

1 Preheat oven to 425 degrees F (220 degrees C).
2 In a saucepan, combine pork, beef, onion, garlic, water, salt, thyme, sage, black pepper and cloves. Cook over medium heat until mixture boils; stirring
occasionally. Reduce heat to low and simmer until meat is cooked, about 5 minutes.
3 Spoon the meat mixture into the pie crust. Place top crust on top of pie and pinch edges to seal. Cut slits in top crust so steam can escape. Cover edges of pie with
strips of aluminum foil.
4 Bake in preheated oven for 20 minutes, remove foil and return to oven. Bake for an additional 15 to 20 minutes until golden brown. Let cool 10 minutes before
slicing.

Makes 8 servings

Gum Drop Cake
2 cups sugar,1 cup shortening,4 eggs,3 cups unsweetened applesauce,2 tabelspoons soada in sauce,DRY INGREDIENTS, 4 cups flour, 1 teaspoon baking
powder, 1 teaspoon cinnamon,1 teaspoon nutmeg,1 pound dates (pitted and chopped), 1 pound walnuts before shelled,1 pound seedless raisins, 1 pound og
fruitcake fruit,1 pound mixed gumdrops, except black ones and only a few of the green ones. , use only the large ones and cut into 1/4 for use.
prepare pans , use loaf pans greese and line with greesed wax paper .
Cream shortening and sugar, add beaten eggs then applesauce,add dry
ingredients and fruit and nuts add 1 pound of fruitcake fruit bake in 3 loaf pans (depending on size of pans) set into water and bake about 30 minutes. don't brown to
much. Take waxed paper off when you take cakes out of oven otherwise the paper will stick to cakes, If you don't like fruit cake fruit subitute candied charries and
candied pineapple. people who say they don't like fruit cake like this one. THIS IS ONE YOU CAN BAKE AHEAD AND HAVE ON HAND FOR

Yummy lemon squares
1 cup flour, 1/2 cup butter or margarine softened, 1/4 powdered sugar,2 eggs,1 cup granulated sugar, 1/2 teaspoon baking powder, 1/4 teaspoon salt the essence
and juice of one lemon,-- Heat oven to 350 degrees,Mix throughly, flour, butter,and powdered sugar, press evenly in bottem of 8X8X2 or 9X9X2 ungreased
baking pan,-- bake about 20 min, beat remaining ingredients about 3 minutes or untill light and fluffy, pour over hot crust,return to oven and bake about 25 minutes
longer or untill no imprint remains when touched lighty in center.cool and cut into squars. Happy Holidays!!

SATIN BALLS
#10 of cheap hamburger meat
1 lg box of Total cereal (1 lb box in USA)
1 lg box of oatmeal (uncooked) (the 32 ounce in USA)
1 jar of wheat germ 10 eggs
1 1/4 c. veg oil
1 1/4 c. unflavored molasses
10 sm pks of unflavored gelatin
pinch of salt and garlic
mix all ingredients together well, much like a meatloaf... put into separate freezer bags and freeze, thawing out as needed. I mixed it in with kibble. Make "meat"
balls (golf ball sized) and mix with food as well.

FAT BALLS

1 lb hamburger (75% is good but I have used 80%)
2 cups rolled oats(uncooked)
2 cups cooked brown rice(boil in a bag saves a lot of hassle)
1/2 cup wheat germ 2 eggs 2 tablespoons of chunky P-Nut butter 2 tablespoons of corn oil 2 tablespoons of unsulfured molasses 2 cups of kibble
Mix all together to form meatballs. I have also made patties. If you measure the oil first, the molasses doesn't stick to the spoon! Dogs love these!

SUGAR FREE STRAWBERRY PIE
1 qt sliced fresh strawberries
1 cup Splenda sugar substitute
1 cup water
3 heaping Tablespoons cornstarch
1 pkg sugar free jello (I use Strawberry Banana)
1 reduced fat grahm cracker crust pie shell
Cool Whip Free

Bring cup of water to a boil, add Splenda, stir, add jello, stir. Put cornstarch in ½ cup water, stir and pour into jello mix, stir till it starts to clear into a glaze. Put
sliced strawberries into glaze, stir to coat and then dump into pie crust. Cool in fridge and then top with Cool Whip Free.

I have made this with blackberries, blueberries and canned peaches. It’s pretty fool proof.

BOURBON / RUM BALLS
Bourbon Balls (Served At The Rocky Mt. Stall AT The National 2002)

1- large bag coconut
1- can sweetened condensed milk
1- 2 lb bag powdered sugar
1- stick butter melted
3-cups chopped pecans
4-oz bourbon or rum
1/4-lb paraffin wax
12-oz. unsweetened chocolate


Dry coconut in oven, do not brown! Do this in a low temp. oven until dry but not browned. Stirring from time to time.
Watch carefully. When dried out let cool and then add bourbon and let set most of the day or overnight. After coconut has soaked mix in the sweetened
condensed milk, melted butter, powdered sugar and the nuts. Chill this in the refrigerator overnight or until firm. In a sauce pan or a electric fondue pot slowly
melt choc and wax together. Form the coconut mixture into balls about the size of a walnut. For best dipping results make sure the balls stay cool. re-refridgerate
if necessary. Place a toothpick into the balls and carefully dip each ball into the choc. mixture. Then place the balls on a waxed papered cookie sheet. After
dipping the balls remove the toothpick. Once the chocolate has hardened you will then need to cover the tooth pick hole. Do this by picking up the ball and dip the
top in the choc. For a decorative touch make a swirl with the choclate. Place back on the sheet allow to dry and enjoy. These can be frozen and brought out later in
the year as well.

MEATY BALLS FOR DOGS
This recipe is a modified version of Satin Balls.

Ingredients:
10 # Ground Beef
2 Large Boxes Oatmeal
16 oz. Fresh Wheat Germ
1 1/4 Cup Oil (combination of Safflower, Olive, Flaxseed - Cold Pressed)
1 1/4 Cup Unsulfured Molasses
1 dozen raw brown eggs
8 scoops Knox Nutra Joint

Mix all ingredients and divide into 10 quart freezer bags and freeze. Thaw as needed. DO NOT COOK

BEEF-ONION DIP
Ingredients:
small jar dried beef, finely chopped
2 8oz. cream cheese, softened
6 scallions, with the green part, finely chopped
1 TBL Accent
Wheat Thins

Add the beef, scallions, and Accent to the softened cream cheese and mix thoroughly. Mound in center of a plate, cover with plastic wrap, and chill.

To serve: surround with Wheat Thins and provide a couple of spreaders. This recipe is especially attractive during the Christmas holidays.

My Mother's Egg batter for Tom and Jerrys
6 eggs,1 pound (3 1/2 cups) powdered sugar, 1 Tabelspoon gelatine(one packet), 1/4 cup cold water, 1/4 cup boiling hot water.
Sprinkle gelatine over 1/4 cup cold water, when softened desolive in 1/4 cup boiling hot water, set aside
Separate eggs and beat whites until almost stiff; add sugar gradually and continue beating.
Beat egg yolks until light and lemon colored and add to whites,beat gelatine into egg mixture.
Store in refrigerator over night.
Mix about 2 Tablespoons into cup of hot milk or water add liquor,

Tom and Jerry liquor= one part light rum and 2 parts brandy .
sprinkle nutmeg on top of each cup. and enjoy.

Chocolate cherry jewel bars
1 1/4 cups flour,2/3 firmley packed brown sugar,3/4 cup butter or margrine,1 egg,1/2 teaspoon salt,1 1/2 cups salted nut mix, 1 1/2 cups halved candied cherries (red and green) 1 cup chocolate chips,
Combine flour with 1/3 cup brown sugar, cut in margrine or butter,until mixture resembles course crumbs, press mixture onto bottem of ungreased 15 X10 inch jelly roll pan. bake at 350 degrees for 15 minutes. Meanwhile beat egg slightly on large bowl stir in remaining 1/3 cup brown sugar, and salt Add nuts,cherries and chocolate chips toss mixture lighty to coat. spoon fruit mixture evenly over baked layer, press firmly to adhere layers.
Bake an additional 20 minutes. Cool and cut into 1 1/2 X 2 inch bars. These are very colorful and Christmasie looking.

Pumpkin Bars
Bars 2C flour, 2C sugar,2t baking powder,1t each baking soda,cinnamon and nutmeg,1/2 each salt and cloves,1C oil,2C canned pumpkin, 4 eggs,1/3 C chopped nuts and 1/2 C raisins.Combine all ing. except nuts and raisins. Beat at low speed until all is moistened then beat 2min at med speed.Add nuts and raisins. Pour into greased 15x10x1 inch pan and bake at350 for 25 to 30 mins or until toothpick inserted in center comes out clean. Cool completely.Frost with icing made with 2C powdered sugar,1/3 C oleo or butter, 3oz pkg. cream cheese softened, 1T milk, 1t vanilla. Frost when cool, makes 48 bars and store in frig. THANKS
